With a new team led by our General Manager Michael Sheppard, we wish you the warmest welcome to Ollys, where each sip is an experience. 

Olly’s is inspired by the essence of cocktail culture, the art of mixing, from flavour to atmosphere, the idea of balance and blend is central not only to the drinks but also to the experience, Olly’s becomes more than just a cocktail bar, it becomes a space where people, stories and spirits mix effortlessly.

Using modern techniques, we have crafted this cocktail as a nod to what is yet to come in the world of mixology. Creamy notes of vanilla soda, subtle notes of cinnamon and Poitin give the illusion of Rhubarb and Custard. Masterfully MIxed.
